It took me longer then I thought it would, but I finally made time to start my own blog.
I wasn't sure where to start, but I was challenged by a friend to eat 30 different vegetables in 30 days as part of National Nutrition Month and it got me thinking. As kids we were told to eat our vegetables "or else," but why? What benefits do veggies really have on our health?
It is common knowledge that they are packed with vital nutrients, minerals and vitamins that are essential for our bodies. But did you know vegetables can curb cravings, clear congestion, and help fight off diseases such as cancer.
By eating foods like vegetables that are nutrient dense, your body blood sugar level evens out and you will stop craving things like sugar and salt. Eating a wide variety of green vegetables has been shown to reduce congestion, especially in lungs, by reducing mucus and removing it from our bodies. Including more vegetables in your diet you can increase your body's ability to fight off colds by strengthening your immune system, purifying your blood and aiding your digestion.
I challenge you to 'eat the rainbow' try a new vegetable a day for 30 days. Recipe for Success Foundation has posted a challenge that I encourage you VegOut! this March.
